So far so good. It looks like they all sealed and they look great. I saved a few peaches to make this yummy cheesecake. It tastes like good old peaches and cream. Simply delicious.
Fresh Peach No-Bake Cheesecake
1 reduced fat graham cracker crust
11 ounces of 1/3 fat cream cheese (room temp)
1 cup powdered sugar
1 (8 0z.) container light whipped topping
Fresh peaches
sugar or Splenda
Cream together cream cheese and powdered sugar in medium sized bowl. Fold in whipped topping. Put mixture into a ready made graham cracker crust. Refrigerate.
When ready to serve cut peaches and add 1 TBSP sugar or Spenda. Slightly mash the peaches and spread over pie or already cut slices.
This can of course be served with whatever topping you choose.
WAAAAY TOOOOO GO! wow 17 jars of delicious peaches to do what ever you want with - sounds like a dream to me!

ReplyDeleteWhen my girlfriend and I used to get together to help each other can - we had a blast. But then the rule was - no one could touch the jars until Thanksgiving - we wanted to at least look at the fruits of our labor for a while. She has gone a bit too far - she STILL has a can of beans up on her soffits, and that was 25 years ago! Gotta love her.

ReplyDeleteEveryone over here has been talking about canning peaches. I so wish I had canning materials! I just have to buy a few fresh ones now and then. In fact I have some in my fridge right now that need to be used up. Maybe I'll have to try this!
