Low Carb Turkey Avocado Swiss Roll-Ups

This has been my lunch of choice for the last week. I am trying to watch my carbs and sugars. You know, white flour, white rice, pasta and of course SUGAR! The first couple days were the hardest. I went to bed as early as possible because I was missing my sugar and I had such a bad headache. I'm feeling better, but it's still hard.

These little turkey rolls were really satisfying and the avocado and Swiss really made it special. These are great even if you aren't a recovering carb addict, like me.

Turkey Avocado Swiss Roll-Ups

Sliced Hickory Smoked Turkey (or whatever kind is on sale :D)

Sliced avocado

1/2 slice of deli Swiss cheese

Boston Bib lettuce (or whatever kind you have on hand)

Lay the turkey slice out on a plate.

Place a piece of lettuce on one end of the turkey slice.

Top with Swiss cheese and avocado slice.

To roll, start from the end with the lettuce, cheese and avocado, roll tightly and sucure with a toothpick.post signature
