Mom's Perfect Lemon Bread

Mom's have the best recipes. Am I right? My mom happens to have the yummiest lemon bread recipe. I love it. My favorite part of the bread is tart glaze that you spoon on top of the loaves as they come out of the oven. The sugar and lemon sink into the crust and create the that bit of "zing" that makes this lemon bread PERFECT!

Mom's Perfect Lemon Bread
(makes 5 mini loaves)

1 cup margarine
2 cups sugar
4 eggs
1 cup buttermilk
1/2 tsp. salt
1/2 tsp. baking soda
3 cups flour
rind of 3 lemons (grate rinds and save juice for glaze)
1 cup nuts (optional)

Glaze:
1 cup granulated sugar
juice of three lemons

Cream sugar and margarine. Add eggs one at a time. In a separate bowl, combine flour baking soda and salt. Add half of flour mixture to wet ingredients, mix to combine. Add buttermilk, mix to combine. Add last of the flour mixture and mix well. Fold in lemon rind. Pour batter into prepared (sprayed) bread tins. Bake at 350 degrees for 40 min.

Cool bread in pans. Poke holes in tops of loaves and drizzle glaze
