Can you tell that I am in a "simplify" mode? I just don't have the energy or motivation to go all out in the kitchen right now. I hope that it is just a phase.....
But who is to say that simple can't be just as good? Just try this soup to convince yourself. I found it at Our Recipe Garden which is a great blog with tons and tons of tried and true recipes.
Chicken Tortellini Soup
INGREDIENTS
4 cans chicken broth2 cans cream of chicken soup
4 chicken breasts, cooked and diced
3/4 cup water
1 can carrots, drained
basil
garlic
minced onion
oregano

DIRECTIONS
Combine all ingredients in a large pot and bring to a boil. Simmer.
Add:
1 bag cheese tortellini
Simmer 30 minutes.
Add:
1 bag frozen broccoli
Simmer 5 minutes.
Oh that looks great...and so easy!

ReplyDeleteI make something similar but just use broth(no cream of chicken)and add Juliene spinach,pesto and parmesan cheese.
