This is a delicious weeknight meal that is loved by kids and adults alike. I love this meal because it is so easy. I think I made this every week for the first few months of my marriage. My poor husband had to gently tell me that we needed to take a break from the Crock Pot Italian Chicken for a while. He was so diplomatic about it too. So, now I try to only make this every month or two. I always serve this with petite peas and my 7 year old mixes the peas in with the chicken and rice. YUM!
Crock Pot Italian Chicken
2-3 chicken breasts (thawed or frozen)
1 stick of butter or margarine
1 packet of Good Seasons Italian Dressing Mix
Place the above ingredients in a Crock Pot and cook on low for about 4 hours. When fully cooked, remove chicken from Crock Pot and shred. Place shredded chicken back into Crock Pot.
Add:
1 can 98% fat free Cream of Chicken Soup
2-3 spoonfuls of 1/3 fat cream cheese
Cover Crock Pot and let cook for 30 more minutes on high. Stir well and add milk if you prefer a thinner consistency.
Serve over cooked rice or noodles.
This is one of our fave slow cooker recipes! Sometimes I like adding a few diced fresh tomatoes toward the end. Yum!
