This soup sounded like a must try!
I must admit that my son literally RAN AWAY when he saw what was for dinner. Green soup? But he ended up getting a second bowl and asking me to make it again.
It tastes like a nice potato soup...but it's green. It is nice and creamy and would go great with a salad and crusty bread.
Gorgeously Green Radish Top Soup
2 TBSP butter
1 medium onion, chopped
2-3 potatoes, sliced
4 cups raw radish greens
4 cups chicken broth
1 cup milk, half and half or cream
Melt the butter in a stock pot, add onions and saute until onions are soft. Add potatoes and greens and stir together until everything is coated with melted butter. Pour in chicken broth. Bring to a boil. Reduce heat and simmer for 30 minutes.
Allow mixture to cool slightly. Transfer to a blender. Blend until smooth.
Return mixture to stock pot and add milk or cream. Cook and stir until well blended.
So easy and so good! Trust me!

great idea- I cooked them up with a little onion and bacon and they are so good - different flavor than any other green ....

I just made a zucchini soup that looked just like this and my kids reacted the same way to the green color. Like yours, they also ended up coming back for seconds though. I love the combination of ingredients in yours; it looks like something my family would enjoy (after they got over the green color). :)

ReplyDeleteI didn't know you could eat radish tops?! Sounds good but there is no way my little picky peanuts would eat it. They would run the other direction and NEVER come back! :)
ReplyDeleteI have never heard of making soup from radish tops. I would definitely try it but there's no way my kids or my husband would eat it. They lose out by not trying new stuff. {{UGH}}
