Gorgeously Green Radish Top Soup

Well, we pulled up a buch of radishes this week that were gorgeous! We had a lot and we can only eat so many salads. So I jumped on the computer and Googled "radish recipes" and was surprised by all the different recipes that came up.

This soup sounded like a must try!

I must admit that my son literally RAN AWAY when he saw what was for dinner. Green soup? But he ended up getting a second bowl and asking me to make it again.

It tastes like a nice potato soup...but it's green. It is nice and creamy and would go great with a salad and crusty bread.

Gorgeously Green Radish Top Soup

2 TBSP butter

1 medium onion, chopped

2-3 potatoes, sliced

4 cups raw radish greens

4 cups chicken broth

1 cup milk, half and half or cream

Melt the butter in a stock pot, add onions and saute until onions are soft. Add potatoes and greens and stir together until everything is coated with melted butter. Pour in chicken broth. Bring to a boil. Reduce heat and simmer for 30 minutes.

Allow mixture to cool slightly. Transfer to a blender. Blend until smooth.

Return mixture to stock pot and add milk or cream. Cook and stir until well blended.

So easy and so good! Trust me!

  3. I just made a zucchini soup that looked just like this and my kids reacted the same way to the green color. Like yours, they also ended up coming back for seconds though. I love the combination of ingredients in yours; it looks like something my family would enjoy (after they got over the green color). :)

  10. I didn't know you could eat radish tops?! Sounds good but there is no way my little picky peanuts would eat it. They would run the other direction and NEVER come back! :)

  11. I have never heard of making soup from radish tops. I would definitely try it but there's no way my kids or my husband would eat it. They lose out by not trying new stuff. {{UGH}}
